Ipomoea batatas - A rare white skinned, white fleshed variety of sweet potato. An excellent source of vitamins, minerals, dietary fibre, potassium, antioxidants and iron. Also low in fat and cholesterol. White Sweet Potato tubers are less sweet than orange varieties. They can be boiled, mashed, baked, fried, etc, cook just as you would other sweet potatoes. Prefers to be grown in rich soil, in a sunny position and to be kept well watered. Leaves will die back with frost, but I have found tubers left in the ground here survive frosts and re-shoot in the spring. These are sold as rooted slips, its best to soak the roots in water for a couple of hours before planting out.
