Scorzonera hispanica - Hardy perennial root vegetable. Full sun to part shade. Pretty yellow flowers. Roots can be very long in ideal conditions, up to 1 metre long. Roots are very nutritious and said to taste of oysters. The roots flavour is improved after frost. Scorzonera has a long history of use, being foraged by Ancient Greeks and Romans. And being cultivated as a vegetable as early as 1660 in Europe. Also used medicinally. Frost hardy. Grows well in most moist, well drained, loose soil types.
