Tragopogon porrifolius - A biennial root vegetable, with creamy white coloured roots. The roots have the flavour of oysters, and the flowering shoots are used as an asparagus substitute. The leafy tops are also edible. The purple flower can be added to salads and also has ornamental value in the garden. Salsify is also a medicinal plant. Grows well in cold weather, and requires some shading in hot weather. Prefers a loose, deep rich soil. Salsify requires regular water.
