Allium fistulosum - A bunching onion variety from the Kujo district of Kyoto in Japan, grown there since the 8th century Highly prized in Japan for its tender texture and sweet flavour. One of the oldest certified traditional heirloom vegetable in Kyoto. The flavour is improved by frost in winter months. Used fresh or cooked in a wide range of traditional dishes. Leaves remain crisp when cooked for a short period.
