Caltha palustris - A really beautiful water / bog plant with pretty yellow flowers held over glossy green leaves. Once popular as a pot herb, must be properly cooked to be safely eaten as it can be toxic. The whole plant is also used in traditional medicine, but again with caution and only by professionals.
