Pachyrhizus erosus - A vining perennial plant that produces edible roots, that can eaten raw or cooked. They sweet, juicy and crisp. Grows in most moist, but well drained soil types. The seeds and leaves are poisonous, do not eat them. Jicama is native to Mexico and Central America and has a long history of consumption there. Not frost hardy.
