Helianthus tuberosus - Herbaceous perennial root vegetable. 1.5-2.5 metres height, 70 cms width. Full sun to part shade. Very easily grown, with very productive results. A long history of use by Native Americans. Jerusalem artichoke is also used as an animal fodder plant, grazing animals enjoy eating the aerial parts of this plant. . The tubers may be left in the ground and harvested as needed. A member of the sunflower family, which produces bright yellow flowers in the summer. The underground tubers are frost hardy, but the aerial p[arts will die down with frost. Grows in most moist, well drained soil types. Produces edible tubers, consumed raw or cooked, use as you would potatoes. Also has medicinal properties.
