Stachys affinis - Hardy, perennial root vegetable.50-60 cms height. Frost hardy, leaves will die back with frosts, but tubers survive underground, re-shooting in the spring. Full sun to part shade. Prefers a rich, well drained soil, and regular watering. Edible roots, consumed raw or cooked, and do not need to be peeled. Tubers are harvested in the autumn, when foliage dies back.The tubers can be left in the ground and harvested as needed. Poultry graze the foliage. Attractive plants that can be grown in vegetable or ornamental gardens. Also a medicinal plant.
