Cichorium intybus - An Italian perennial variety of Chicory grown primarily for the stems of the leaves. Leaves are removed and the stems are cooked in various traditional dishes. The heart of the plant is also highly valued and the most favoured part of the plant for consumption. Eaten raw or cooked. A hardy cut and come again perennial vegetable.
